| Arran : le single malt de l'île d'Arran s'affirme de plus en plus comme un grand d' Ecosse. Une nouvelle version non filtré à froid et deux single casks affinés en fût de cognac et en fût de calvados sont désor-mais disponible. Des whiskies élégants, pleins de finesse, ou le côté iodé est parmi les plus discrets des Islay. Mes préférences vont sur le Non-Filtré à froid pour sa générosité élégante et son onctuosité, pour les variétés finish a Cognac Cask et Calvados, ils ont chacun une grande distinction et une superbe longueur, à déguster par très très petite lampée : attention 58°... | |||||||

| Edradour : la maison de négoce Signatury Vintage a racheté Edradour, la plus petite distillerie d'Ecosse, en juillet 2002. Spécialiste des mises en bouteille fût par fût, sans filtrage à froid et sans coloration. Son propriétaire, Andrew Symington, a été élu le meilleur embouteilleur indépendant en 2002, et 2003 par la revue Whisky Magazine, bientôt vendu à nos caves courant février version en français. L'Edradour, un whisky généreux onctueux, à la couleur soutenue, avec une finale assez longueur à l'élégante douceur fruitée. | |||||||

| Caol Ila : Situé au nord-est de l'île d'Islay, près de Port Askaig, la distillerie a été entièrement rénovée en 1974. Ses alambic de grande taille élabore un single malt d'une remarquable finesse exprimant avec douceur l'orge maltée fumée. Essayez ce whisky sur du saumon sauvage fumé, ou encore une des huitres spéciales Gillardeau...Le Caol Ila de négoce est en voie de disparition. La version officiel 12 ans, s'affirme comme le Caol Ila de référence ( un Islay- iodé, fumé, acidulé, évoluant sur des notes d'amande douce, de réglisse ). | |||||||
